The photobooth is fully digital, but guests will receive access to a gallery from which they can download to print.

No! The advantage of wifi at an event site is it does allow gallery links to be sent to guests immediately, but it is not a requirement to run the photobooth. The gallery links are sent within 24 hours of the event, when the booth connects to a network again.
